1. Yes. They can collect your information without your expressed consent. Whether you notice their being on the system is a different matter.

2. Anti-virus solutions cannot prevent against hackers! At the very most they will just block any bad programs that these hackers deposit in your system. But ultimately you will require a good firewall installed.

3. Your IP address can be recorded on any website. It is not particularly a security risk, especially if you have a dynamic address - that means your ISP (Internet Service Provider) changes your IP address every now and then! You are safe, if you have a firewall up and running.

4. That is a very advanced subject matter. Simply put, most hackers have professional tools to allow them to scan for unprotected ports and proceed to invade them. However, I'm not an expert in hacking so I can't give you much information on this trade.
